Instructions

    Heat olive oil in a large skillet or wide pan over medium heat.

    Add diced onion and cook for 3-4 minutes until softened and translucent.

    Add diced green pepper and cook for another 3-4 minutes until tender.

    Add minced garlic, paprika, and red pepper flakes. Cook for 1 minute until fragrant.

    Add diced tomatoes, salt, and black pepper. Cook for 5-6 minutes, stirring occasionally, until tomatoes break down and create a saucy base.

    Reduce heat to low. The mixture should be thick and jammy, not watery.

    Beat eggs lightly in a bowl and pour them into the tomato mixture.

    Gently stir the eggs into the vegetables, scrambling them slowly until they're just set but still creamy, about 2-3 minutes.
