Traditional Turkish scrambled eggs with tomatoes, peppers, and spices. This rustic dish combines soft scrambled eggs with a rich tomato base for a comforting and flavorful breakfast.
Ingredients

- 2Tomatoes3 medium ripe tomatoes, diced
- 3Green Pepper1 green bell pepper or Turkish pepper, diced

- 7Paprika1 teaspoon sweet paprika
- 8Turkish Red Pepper1/2 teaspoon Turkish red pepper flakes (pul biber) or red pepper flakes
- 9Salt1 teaspoon salt, or to taste
- 10Black Pepper1/2 teaspoon freshly ground black pepper
- 11Fresh Parsley2 tablespoons fresh parsley, chopped
- 12Turkish Cheese2 tablespoons crumbled beyaz peynir or feta cheese (optional)
Instructions

Heat olive oil in a large skillet or wide pan over medium heat.

Add diced onion and cook for 3-4 minutes until softened and translucent.

Add diced green pepper and cook for another 3-4 minutes until tender.

Add minced garlic, paprika, and red pepper flakes. Cook for 1 minute until fragrant.

Add diced tomatoes, salt, and black pepper. Cook for 5-6 minutes, stirring occasionally, until tomatoes break down and create a saucy base.

Reduce heat to low. The mixture should be thick and jammy, not watery.

Beat eggs lightly in a bowl and pour them into the tomato mixture.

Gently stir the eggs into the vegetables, scrambling them slowly until they're just set but still creamy, about 2-3 minutes.

Remove from heat while eggs are still slightly soft, as they'll continue cooking from residual heat.

Sprinkle with crumbled cheese if using and fresh parsley.

Serve immediately in the cooking pan with crusty Turkish bread, pide, or warm flatbread for scooping.
