    1 tablespoon light soy sauce

    2 small shallots, thinly sliced

    2 cloves garlic, minced

    1 small red chili, sliced (optional)

    1 teaspoon palm sugar or brown sugar

Instructions

    Heat oil in a wok or large skillet over medium-high heat until shimmering.

    Crack eggs into the hot oil one at a time. They should sizzle immediately and bubble around the edges.
