    1-2 very fresh large eggs

    Vegetable Oil
    3-4 cups neutral oil for deep frying (vegetable, canola, or peanut oil)

    Pinch of flaky sea salt

    Black Pepper
    Freshly ground black pepper to taste

    Paprika
    Pinch of smoked paprika (optional)

Instructions

    Heat oil in a heavy-bottomed pot or deep fryer to 375°F (190°C). Use enough oil so the egg can float freely.

    Crack each egg into a small bowl or ramekin first - this makes it easier to slide into the hot oil safely.

    Once oil reaches temperature, carefully and quickly slide the egg from the bowl into the hot oil, starting from the edge closest to you.

    The egg will immediately bubble and sizzle vigorously. Fry for 1-2 minutes until the whites are golden brown and crispy.

    Using a slotted spoon, carefully turn the egg over and fry for another 30-60 seconds until both sides are golden and crispy.

    Remove the egg with a slotted spoon and briefly drain on paper towels to remove excess oil.
