
Breakfast Strata
A make-ahead breakfast casserole featuring layers of crusty bread soaked in a savory custard with eggs, milk, and cheese. Perfect for entertaining, this hearty dish combines breakfast sausage, fresh vegetables, and melted cheese for a satisfying brunch centerpiece.
Ingredients
- 1Day-Old Bread8 cups cubed day-old crusty bread (sourdough or French bread preferred)
- 2Breakfast Sausage1 pound breakfast sausage, cooked and crumbled
- 3Large Eggs8 large eggs, room temperature
- 4Whole Milk2½ cups whole milk
- 5Cheddar Cheese2 cups shredded sharp cheddar cheese, divided
- 6Yellow Onion1 medium yellow onion, diced
- 7Bell Pepper1 medium bell pepper, diced
- 8Fresh Spinach3 cups fresh baby spinach, roughly chopped
- 9Mushrooms8 ounces button mushrooms, sliced
- 10Dijon Mustard1 teaspoon Dijon mustard
- 11Garlic Powder½ teaspoon garlic powder
- 12Salt1 teaspoon salt
- 13Black Pepper½ teaspoon freshly ground black pepper
- 14Butter2 tablespoons butter for greasing dish
- 15Green Onions3 green onions, chopped for garnish
Instructions

Generously butter a 9x13-inch baking dish. Arrange cubed bread in the prepared dish in an even layer.

In a large skillet over medium-high heat, cook and crumble sausage until browned and cooked through, about 7-8 minutes. Remove sausage and set aside.

In the same skillet, sauté diced onion and bell pepper until softened, about 5 minutes. Add mushrooms and cook until liquid evaporates, 5-7 minutes more.

Add chopped spinach to the skillet and cook just until wilted, about 2 minutes. Remove from heat and let cool slightly.

In a large bowl, whisk together eggs, milk, Dijon mustard, garlic powder, salt, and pepper until well combined.

Stir in the cooked sausage, vegetable mixture, and 1½ cups of the shredded cheese into the egg mixture.

Pour the egg mixture evenly over the bread cubes, gently pressing down to ensure bread is well-soaked.

Sprinkle remaining ½ cup cheese over the top. Cover tightly with plastic wrap and refrigerate overnight (or at least 4 hours).

Remove strata from refrigerator 30 minutes before baking. Preheat oven to 350°F (175°C).

Remove plastic wrap and bake uncovered for 45-50 minutes, until golden brown on top and a knife inserted in center comes out clean.

Let stand for 10 minutes before serving. The strata will deflate slightly as it cools.

Garnish with chopped green onions and serve warm. Cut into squares with a large spoon rather than trying to slice cleanly.
