Instructions

    Generously butter a 9x13-inch baking dish. Arrange cubed bread in the prepared dish in an even layer.

    In a large skillet over medium-high heat, cook and crumble sausage until browned and cooked through, about 7-8 minutes. Remove sausage and set aside.

    In the same skillet, sauté diced onion and bell pepper until softened, about 5 minutes. Add mushrooms and cook until liquid evaporates, 5-7 minutes more.

    Add chopped spinach to the skillet and cook just until wilted, about 2 minutes. Remove from heat and let cool slightly.

    In a large bowl, whisk together eggs, milk, Dijon mustard, garlic powder, salt, and pepper until well combined.

    Stir in the cooked sausage, vegetable mixture, and 1½ cups of the shredded cheese into the egg mixture.

    Pour the egg mixture evenly over the bread cubes, gently pressing down to ensure bread is well-soaked.

    Sprinkle remaining ½ cup cheese over the top. Cover tightly with plastic wrap and refrigerate overnight (or at least 4 hours).

    Remove strata from refrigerator 30 minutes before baking. Preheat oven to 350°F (175°C).

    Remove plastic wrap and bake uncovered for 45-50 minutes, until golden brown on top and a knife inserted in center comes out clean.
