    2 large eggs, room temperature

    1/2 cup fresh bread crumbs (from day-old bread)

    3-4 tablespoons extra virgin olive oil

    1 tablespoon unsalted butter

    Pinch of flaky sea salt

    Freshly ground black pepper to taste

    Fresh parsley or chives for garnish (optional)

Instructions

    Heat olive oil and butter in a medium non-stick or cast iron skillet over medium heat until the butter melts and begins to foam.

    Add the fresh bread crumbs to the hot fat and stir constantly for 2-3 minutes until they become golden brown and crispy.

    Push the breadcrumbs to one side of the pan, creating space for the eggs.

    Carefully crack the eggs into the clear space in the pan, being careful not to break the yolks.

    Using a spoon, gently baste the eggs with the hot oil and scatter some of the toasted breadcrumbs over the egg whites.

    Cook for 2-3 minutes until the whites are set but the yolks remain runny. The breadcrumbs should be deeply golden and crispy.

    Season with flaky sea salt and freshly ground black pepper.

    Carefully transfer to a plate, making sure to include all the crispy breadcrumbs. Garnish with fresh herbs if desired and serve immediately.
